Ingredients:

  • ½ lb. pizza dough (store bought or homemade)

  • 1 tablespoon extra virgin olive oil

  • ½ cup shredded mozzarella cheese

  • 2 pears, thinly sliced lengthwise (I used the mandolin for slicing)

  • ¼ cup sliced almonds

  • ⅓ cup gorgonzola cheese

  • A handful of arugula

  • Drizzle of balsamic glaze

  1. Preheat the oven to 425 degrees. 

  2. On a floured surface, roll the pizza dough into a thin rectangle (about ¼ inch thick). I separated my dough into two separate flat breads. 

  3. Place flatbread dough onto a baking sheet lined with parchment paper or a pizza stone. 

  4. Drizzle with olive oil and sprinkle mozzarella evenly across the crust. Place pear slices on top, covering most of the pizza. Sprinkle with sliced almonds and gorgonzola cheese. 

  5. Bake in the oven until the bottom is crisp (about 15-17 minutes). 

  6. Spread arugula over the top and drizzle with balsamic glaze.
