Cauliflower Mac & Cheese

Ingredients:

  • Pasta of your choice (I used Banza Shells)

  • 2 cups cauliflower florets, cut into ½ inch pieces

  • 2 cloves garlic, sliced or minced

  • ⅓ cup parmesan cheese

  • ⅓ cup white sharp cheddar cheese

  • 1 tablespoon low fat cream cheese

  • ¼-½ cup vegetable stock

  • Chopped parsley

  1. Prepare your choice of pasta according to package instructions. In a large pan, heat 1-2 tablespoons of olive oil over medium heat and add cauliflower. Cook, stirring occasionally, until cauliflower is softened and lightly browned (about 8 minutes). Season with salt and pepper. Add garlic to the pan and cook for an additional 2 minutes. 

  2. Put cooked cauliflower and garlic into a food processor with parmesan cheese, sharp cheddar cheese, cream cheese, and ¼ cup vegetable stock. Blend and add additional stock 1 tablespoon at a time until you’ve reached desired consistency.

  3. Taste and season with salt and pepper. Pour over pasta and stir to combine. Garnish with chopped parsley.
