      <image:title>Recipes - Warm Miso Kale Salad - If you know me in real life, you know I’m not big on strict resolutions. The “all or nothing” attitude has never worked for me. I like to think of January as an opportunity to reevaluate and add more to my life, rather than being restrictive.  So now that we’ve officially closed out 2020 and rung in 2021, here are some things I am hoping to do more of: Read more books Cook more homemade meals Eat more plants On that note, I share this Warm Miso Kale salad. In the winter months, it can be challenging to incorporate lots of colorful foods into our diet, but this salad will have you covered. All the veggies are tossed in a tasty miso dressing before being roasted in the oven. You can top it with whatever you like, but I chose goat cheese, sourdough croutons, and crispy shallots!</image:title>

      <image:title>Home (old) - Chickpea Cookie Dough Truffles - Ingredients: 1 15.5 oz. can of chickpeas, drained and rinsed ½ cup peanut butter ¼ cup maple syrup ¼ cup almond flour 1 teaspoon cinnamon 1 teaspoon vanilla  ½ teaspoon salt ¼ teaspoon baking powder ¼ teaspoon baking soda 1 ¼  cups mini chocolate chips 1 tablespoon coconut oil ½ teaspoon sea salt In a food processor, combine chickpeas, almond butter, maple syrup, almond flour, cinnamon, vanilla, salt, baking powder, and baking soda. Scrape the edges of the food processor and blend again.  Remove the blade from the food processor and use a spatula to fold in ½ cup mini chocolate chips.  Using a spoon, scoop the batter and form tablespoon-sized balls. Place on a parchment-paper lined plate or pan and transfer to the freezer.  While batter chills, put ¾ cup mini chocolate chips and coconut oil into a microwave-safe bowl. Microwave in 20 second intervals, stirring in between, until chocolate is melted. Remove the batter from the freezer. Using a spoon, roll each ball through the melted chocolate and return to the parchment paper. Sprinkle with sea salt and return to the freezer for chocolate to harden (about 15 minutes). I also store extras in the freezer to avoid melting!</image:title>

      <image:title>Home (old) - White Bean Dip - Ingredients 2 15 oz. cans of cannellini beans, ½ cup of liquid reserved  8 cloves garlic, skin removed 3 tablespoons olive oil, and additional to pour on top 1 tablespoon harissa powder 1 teaspoon salt 1 teaspoon chili flakes  Preheat the oven to 400 degrees. Put garlic cloves on a small square of aluminum foil. Drizzle with olive oil and fold into a pouch. Place the garlic pouch on a baking sheet and cook for 40 minutes. Wait for garlic to roast. When garlic is roasted, put beans, roasted garlic, olive oil, harissa powder, salt, chili flakes into a food processor and blend until smooth.  Blend in reserved liquid from the beans 1 tablespoon at a time until the dip is smooth and creamy  Transfer to a bowl and top with additional chili flakes and a drizzle of olive oil. Serve with crackers, pretzel chips, or veggies!</image:title>

      <image:title>Home (old) - Greek Style Linguine - Ingredients: 9 oz Linguine (I used Buitoni’s made-fresh linguine) 1 pint cherry tomatoes 4 tablespoon olive oil ¼ cup cooking wine or chardonnay  1 lemon, halved and zested 4 cloves garlic, minced ¾ cup pitted kalamata olives, (I halved mine) 3 tablespoons capers ½ cup crumbled feta cheese ¼ cup fresh parsley, roughly chopped ¼ cup fresh basil, chopped</image:title>
      <image:caption>Preheat the oven to 400 degrees. On a baking sheet, toss cherry tomatoes, salt/pepper and a drizzle of olive oil. Roast in the oven until tomatoes are soft and lightly blistered (about 15 minutes).  While tomatoes cook, bring salted water to a boil and prepare linguine according to the package instructions.  While linguine cooks, heat 4 tablespoons of olive oil in a pan over medium heat. Add the garlic and cook until fragrant (about 1 minute). Add wine and juice of lemon and cook until reduced (about 2 minutes).  Add roasted tomatoes to the pan. Gently press tomatoes so their juices release into the sauce. Add kalamata olives, capers and drained linguine and toss to coat.  Stir in crumbled feta, parsley, and basil and toss until incorporated Garnish with additional basil leaves and lemon zest.  Serve with a glass of white wine!</image:caption>

      <image:title>Home (old) - Matcha Peanut Butter Cups - Ingredients:  1 cup white chocolate chips 2 tablespoons coconut oil 1-2 teaspoons matcha powder ½ cup Teddie Peanut Butter 2 tablespoons maple syrup Sea salt Place cupcake liners into a mini muffin tray.  In a small microwave safe bowl, combine white chocolate chips and coconut oil. Heat in the microwave in intervals of 15-20, stirring in between until melted. Stir in matcha powder.  Pour 1/2 teaspoon-size dollops of white chocolate into the bottom of each cupcake liner. Put in the freezer for 5 minutes. While white chocolate freezes, combine peanut butter and maple syrup in a small bowl. Remove the cupcake tray from the freezer and add ½ teaspoon-size dollops of peanut butter on top of the hardened chocolate.  Top each cup with an additional teaspoon of white chocolate. Freeze for 5 more minutes, then sprinkle with sea salt. I keep mine in the freezer to avoid melting!</image:title>

      <image:title>Home (old) - Fudgiest Sweet Potato Brownies - Ingredients: 1 large sweet potato ⅓ cup peanut butter (I used Teddie Old Fashioned Smooth peanut butter) ⅓ cup maple syrup  2 tablespoons coconut oil, melted 1 teaspoon vanilla ⅓ cup flour (I used almond flour) ½ cup cocoa powder  1 teaspoon cinnamon ½ teaspoon salt ⅓ cup mini chocolate chips Sea Salt (optional)</image:title>
      <image:caption>Preheat the oven to 400 degrees. Grease and 8inX8in pan.  Peel the sweet potato and chop into half-inch dice. Put diced sweet potatoes in a large pot. Pour just enough water to cover the sweet potatoes into the pot. Bring to boil and cook until potatoes can easily be pierced with a fork (about 10 minutes). Strain and let cool.  In a large mixing bowl, blend sweet potatoes, peanut butter, maple syrup, melted coconut oil and vanilla with a hand mixer until smooth.  In a medium mixing bowl, whisk flour, cocoa powder, cinnamon, and salt.  Blend dry ingredients into the sweet potato mixture. Fold in ⅓ cup mini chocolate chips.  Spread batter into the pan and cook for 20-24 minutes. Let cool in the pan before cutting. Sprinkle with sea salt and enjoy!</image:caption>

      <image:title>Home (old) - Chickpea Blondies - Ingredients: 1 15.5 oz. can of chickpeas, drained and rinsed ½ cup almond butter (peanut butter works too!) ¼ cup maple syrup ¼ cup almond flour 1 teaspoon cinnamon 1 teaspoon vanilla  ½ teaspoon salt ¼ teaspoon baking powder ¼ teaspoon baking soda ¼ cup chocolate chips (I used mini) ¼ cup butterscotch chips Preheat the oven to 350 degrees. Grease an 8 in. x 8 in. pan.  In a food processor, combine chickpeas, almond butter, maple syrup, almond flour, cinnamon, vanilla, salt, baking powder, and baking soda. Scrape the edges of the food processor and blend again.  Remove the blade from the food processor and use a spatula to fold in chocolate and butterscotch chips. Transfer batter to the pan and bake for 26-28 minutes.</image:title>

      <image:title>Home (old) - Crispy Sweet Potato Fries and Yogurt-Garlic Dipping Sauce - Sweet Potato Fries- 2 large sweet potatoes 2 teaspoons avocado oil 1 teaspoon smoked paprika  Salt and pepper Grated Parmesan cheese Greek Yogurt Garlic Dipping Sauce- ½ cup plain greek yogurt 1 clove garlic, minced 1 teaspoon fresh minced parsley, and additional to garnish Juice of 1 lemon  Salt and pepper  Cut sweet potatoes into ¼ inch shoe strings. Place in a large bowl with ice water and let soak for at least 30 minutes.  Dry sweet potatoes. Toss in a bowl with avocado oil, smoked paprika, and salt and pepper to taste.  Cook sweet potatoes in the airfryer at 400 degrees for 12-15 minutes, shaking the basket every 5 minutes. I worked in batches and left sweet potatoes in a single layer. Don’t have an airfryer? Preheat the oven to 425 degrees and cook for 20 minutes, tossing halfway through.  While the sweet potatoes cook, sprinkle ¼ teaspoon salt over the minced garlic and scrape/press with a fork until garlic becomes pasty. In a small bowl, whisk yogurt, garlic paste, parsley, and lemon juice. Add salt and pepper to taste. If the dipping sauce is too thick, whisk in a teaspoon or two of water.  Sprinkle parmesan cheese and additional parsley on top of sweet potato fries!</image:title>

      <image:caption>Preheat the oven to 325 degrees. In a large mixing bowl, combine oats, quinoa, almonds, coconut, and cinnamon.  In a small pot, heat coconut oil over low heat until melted. Add honey and vanilla and stir until combined and ingredients are warm. Pour honey and coconut oil into the mixing bowl and stir to combine.  Line a baking sheet with parchment paper. Spread granola in a thin layer. Cook for 15 minutes. Use spatula to toss granola and re-spread. Cook for an additional 3-5 minutes. Let granola cool on the baking sheet for about 15 minutes. Use spatula to break up large clusters. Toss in craisins and white chocolate chips. Enjoy with fruit, yogurt, chia pudding, or just eat as is!</image:caption>

      <image:caption>Ingredients: Extra virgin olive oil 1 8 oz block of feta cheese 4 cloves garlic ½ cup cherry tomatoes ½ cup mixed olives  6 sprigs of thyme Lemon, quartered and zested  1 tablespoon honey Preheat the oven to 350 degrees. Remove feta from the package and use a paper towel to remove excess moisture. In a casserole dish, drizzle 1 tablespoon of olive oil in the bottom. Place feta on top. Arrange garlic cloves, cherry tomatoes, mixed olives, and four of the thyme sprigs around the feta.  Squeeze juice of lemon on top. Place lemon wedges around the feta. Strip the thyme leaves from the remaining two sprigs. Sprinkle thyme leaves and lemon zest on top.  Drizzle honey over the entire dish. Add additional olive oil as desired.  Bake in the oven for 30 minutes, then broil for 3 minutes.</image:caption>

      <image:caption>Ingredients: Pasta of your choice (I used Banza Shells) 2 cups cauliflower florets, cut into ½ inch pieces 2 cloves garlic, sliced or minced ⅓ cup parmesan cheese ⅓ cup white sharp cheddar cheese 1 tablespoon low fat cream cheese ¼-½ cup vegetable stock Chopped parsley Prepare your choice of pasta according to package instructions. In a large pan, heat 1-2 tablespoons of olive oil over medium heat and add cauliflower. Cook, stirring occasionally, until cauliflower is softened and lightly browned (about 8 minutes). Season with salt and pepper. Add garlic to the pan and cook for an additional 2 minutes.  Put cooked cauliflower and garlic into a food processor with parmesan cheese, sharp cheddar cheese, cream cheese, and ¼ cup vegetable stock. Blend and add additional stock 1 tablespoon at a time until you’ve reached desired consistency. Taste and season with salt and pepper. Pour over pasta and stir to combine. Garnish with chopped parsley.</image:caption>
