Pumpkin Spice Whoopie Pies

When I think whoopie pies, I think of being a kid! They were not a treat I had very often, but they were so fun to make...and eat! I mean who doesn’t love eating desserts that come in sandwich form?

These Pumpkin Spice Whoopie Pies offer a sophisticated spin on the childhood favorite. That’s right, you can try to tell your kids these are for adults only— although I don’t think they’ll buy it!

Moist pumpkin spice pies are sandwiched with a sweet, cream cheese frosting for the perfect Autumn treat!

Whoopie Pie Ingredients:

  • 3/4 cups sugar

  • 1/2 cups brown sugar

  • 1 stick butter, softened

  • 2 eggs

  • 1 teaspoon vanilla

  • 1 cup pumpkin purée

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 teaspoon pumpkin pie spice

Frosting ingredients:

  • 3 cups confectioners sugar

  • 1 stick butter

  • 8 oz. cream cheese

  • 1 teaspoon vanilla

  • 2 tablespoons maple syrup

  1. Preheat the oven to 350 degrees.

  2. In a large bowl, cream sugar, brown sugar and butter with a hand mixer.

  3. Mix in eggs, vanilla, and pumpkin purée.

  4. In a separate mixing bowl, whisk flour, baking soda, baking powder, salt, and pumpkin pie spice.

  5. Blend flour mixture into wet ingredients. Do not over-mix.

  6. Scoop tablespoon/1.5 tablespoon-sized scoops of batter onto a parchment paper lined baking sheet about 2 inches apart (or lightly spray a nonstick pan with cooking spray).

  7. Bake for 10-12 minutes, working in batches. Remove each pie from pan and cool on a wire cooling rack.

  8. While the pies cook, mix all frosting ingredients in a large mixing bowl with a hand mixer.

  9. Once pies have cooled, spread frosting on the flat sides of half of the pies. Top with the additional pie to make a sandwich. Enjoy!
