Chickpea Blondies

Ingredients:

  • 1 15.5 oz. can of chickpeas, drained and rinsed

  • ½ cup almond butter (peanut butter works too!)

  • ¼ cup maple syrup

  • ¼ cup almond flour

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla 

  • ½ teaspoon salt

  • ¼ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ¼ cup chocolate chips (I used mini)

  • ¼ cup butterscotch chips

  1. Preheat the oven to 350 degrees. Grease an 8 in. x 8 in. pan. 

  2. In a food processor, combine chickpeas, almond butter, maple syrup, almond flour, cinnamon, vanilla, salt, baking powder, and baking soda. Scrape the edges of the food processor and blend again. 

  3. Remove the blade from the food processor and use a spatula to fold in chocolate and butterscotch chips.

  4. Transfer batter to the pan and bake for 26-28 minutes.
