Air Fry “Shroomacon” – Mushroom Bacon

If you know me, you know that I LOVE bacon. I was inspired to make my own ‘Shiitake Bacon’ after trying it at Lulu Green, a new vegan cafe in South Boston.

Although nothing will ever replace the real deal for me, this “Shroomacon” gives me that salty, savory taste I crave when trying to eat healthy.

Try it with eggs, avocado toast, tacos, or snack on it by itself!

Ingredients

  • 3-4 handfuls shiitake mushrooms

  • cooking spray (I use PAM Avocado oil spray)

  • 1 1/2 Tablespoons tamari or soy sauce

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon sea salt

  1. Clean mushrooms with a damp paper towel instead of washing under water. Mushrooms are like a sponge and you want to avoid over-saturating with water.

  2. Slice mushrooms into ¼ inch strips and place in a bowl. 

  3. Lightly spray and toss mushrooms with cooking spray. Pour tamari/soy sauce and toss until mushrooms are lightly coated. 

  4. Heat up the air fryer for 3 minutes at 350 degrees. Place mushrooms in the air fryer and cook for 17 minutes, tossing every 4-5 minutes. 

  5. Once mushrooms are crispy, place in a bowl and toss with paprika and salt.

Don’t have an air fryer? Bake for 20-25 minutes at 370 degrees.
