Grapefruit Salad with Citrus Dressing

I hope everyone had a great Fourth of July weekend! Mine was spent in Cape Cod. Although the weather wasn’t stellar, I enjoyed the company of friends I hadn’t seen since March and lots and lots of good food!

The days after long weekends always have me feeling a bit sluggish. Maybe it's the grilled meat, maybe it's the heat...or maybe it’s the white claws-- alright, probably a combination of everything. I find myself craving lighter meals and lots of greens. 

I think there's a misconception that eating healthy, especially after a few days of celebrating, isn’t supposed to be enjoyable. I’ve seen people force down unappetizing green smoothies or take vegetable shots, just to get some greens. Hang around here long enough and you’ll realize that’s not my style. If we really want to incorporate more healthy foods into our diets, we have to like what we’re eating. For me, this salad checks all the boxes-- healthy, refreshing, and full of flavor!

Grapefruit Salad with Citrus Dressing (serves 3-4)

Ingredients:

Dressing-

  • ¼ cup grapefruit juice

  • 2 tablespoon lemon juice, plus zest of lemon

  • 1 teaspoon dijon mustard

  • 1 teaspoon honey

  • ½ teaspoon salt

  • Black pepper, to taste

  • ½ cup olive oil

Salad- 

  • 5 oz. of preferred greens, I used baby kale, but mixed greens, arugula, or baby spinach work too

  • ¼ cup basil leaves, roughly chopped or torn

  • 2 avocados, thinly sliced

  • 1 cup grapefruit chunks (about 1 large grapefruit)

  • 8 oz. cheese, I used burrata but goat cheese would be tasty too 

  1. Mix grapefruit juice, lemon juice, lemon zest, dijon mustard, honey, salt, and pepper in a medium bowl. Slowly add the olive oil to the mixture, whisking continuously. Pour into a jar and set aside. You will likely have left-overs to use with another salad! If the mixture begins to separate, mix again before serving. 

  2. Place greens in a large mixing bowl. Drizzle with dressing and toss to coat.

  3. Add basil leaves, avocado slices, grapefruit chunks, and cheese. Gently toss. 

  4. Transfer to serving plates or bowls. Drizzle with additional dressing, to taste.
